Asparagus Bruschetta

    3 cupsWater
    12 lbFresh Asparagus, Trimmed into ½ inch pieces
    2 cupsGrape Tomatoes, halved
    1/4 cupFresh Basil, minced
    3 Green Onion, chopped
    3 tbspOlive Oil
    3 Garlic Cloves
    1 1/2 tspLime Zest
    1/4 tspSalt
    1/4 tspGround Black Pepper
    12 slicesFrench baguette , toasted
    1 1/2 cupsGoat Cheese, grated

      1. In a large saucepan, bring water to a boil. Add the asparagus; cover and boil for 2-4 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry.
      2. In a bowl, combine the asparagus, tomatoes, basil, onions, lime juice, oil, garlic, lime peel, salt and pepper.
      3. Using a slotted spoon, spoon asparagus mixture onto bread. Sprinkle with Gos & Gris Goat Cheese.
