Pork Roast with Apple and Sage Stuffing

    1 1 Pork Loin
    1 1 Onion, diced
    2 tbspOlive Oil
    2 2 Garlic Cloves, chopped
    3 3 Sage Leaves, chopped
    3 slices3 slicesProsciutto, finely chopped
    1 1/4 cupsFresh Breadcrumbs
    1/2 cupDried Apples, finely chopped
    1 1/2 cupsGoat Cheese, grated
    2 tbspApple Juice
    1/4 tspwhite pepper

    1. Heat olive oil in a frying pan over medium heat. Add onion, garlic, sage leaves and prosciutto. Sauté until onion is soft and transparent, then transfer onion mixture to a bowl.
    2. Add bread crumbs, Salerno Goat Cheese, dried fruit and apple juice. Stir to combine and then season with pepper.
    3. Using a large knife, make an incision through the loin of pork, press the stuffing into it and then roast until done (cooking time will vary depending on the size of the loin).
    4. Alternatively, you can place stuffing into a heat-proof dish and bake in the oven separately from the pork loin.
